Special Poncha with Sugarcane Juice – Recipe from “Sociedade dos Engenhos da Calheta”

Poncha Sociedade dos Engenhos da Calheta, Lda.


Peel and juice of 1 lemon;
Juice of one half sugar cane;
1 measure of “White Madeira Rum 50%” from Sociedade de Engenhos da Calheta


In a glass, strongly beat the lemon peel with a pestle to extract the oils. Add the lemon juice and a
measure of Madeira Rum. Add the sugar cane juice and mix well with the “mexelote” (Traditional Poncha Instrument)
Strain the mixture into a traditional glass of Poncha.
